Ingredients
1 12 oz package of frozen SeaPak® Shrimp Scampi, frozen
1 cup shredded sharp cheddar cheese
6 extra-large fresh jalapeño peppers
6 slices of thinly sliced bacon
Directions
- Cook shrimp scampi according to package directions and cool for 5 minutes.
- Stir the cheddar cheese into the scampi and set aside.
- Meanwhile, heat your grill to medium-high heat.
- Prep the peppers. Cut a sliver off the side of each jalapeño and remove the seeds and membranes.
- Stuff each jalapeño with the shrimp and cheese mixture.
- Wrap the stuffed jalapeños with a slice of bacon.
- Cook the peppers on a hot grill for 12 to 18 minutes until the bacon cooks through, turning occasionally and watching for grease flares.
- Serve immediately.
Shrimp Scampi Foil Packets

Ingredients
1 12 oz package of frozen SeaPak® Shrimp Scampi
1 small zucchini, sliced thin
1 small, thinly-sliced yellow squash
1 red bell pepper that’s been seeded and sliced thin
1/2 small red onion that’s been sliced very thin
Directions
- Heat the outdoor grill to high.
- Prepare eight equal lengths of foil and create four stacks, two pieces thick. Spray the top piece of foil in each stack with non-stick cooking spray.
- Place zucchini and yellow squash in the center of the foil.
- Divide the frozen shrimp scampi equally among the four packets and top with the sliced peppers and onion.
- Fold up each packet to seal in the steam.
- Place packets on the hot grill and cook for about 15 to 20 minutes until the veggies are tender.
- Serve immediately.
Salmon Burgers with Salsa and Slaw

Ingredients
4 frozen SeaPak® Salmon Burger Patties
4 hamburger buns
For the Cabbage Slaw:
1 cup chopped green cabbage
2 Tbsp mayonnaise
1 Tbsp Dijon mustard
1 fresh lime
1/4 tsp garlic powder
Salt and pepper
For the Tomato Corn Salsa:
1/2 cup diced grape tomatoes
1 8 oz can corn, drained
1/4 cup diced sweet onion
1 Tbsp chopped cilantro
1/2 tsp minced garlic
1 fresh lime
Salt and pepper
Directions
- Cook Salmon Burgers on the grill according to package directions.
- Toast the buns face down.
- Prepare the slaw: Combine all ingredients except lime in a small bowl. Squeeze with fresh lime juice and add salt and pepper to taste.
- Divide slaw between the four bottom buns. Top with a cooked salmon burger.
- Prepare the salsa by combining all the ingredients in a small bowl. Squeeze with lime juice and add salt and pepper to taste.
- Spoon salsa onto the salmon burgers and top with buns.
- Serve immediately.
